So, I’d never had a “honey joy” before I moved to Australia and the first time I tried one I felt like I’d wasted the last 30 years of eating without them. Ok, that might be a bit dramatic, especially since they’re so simple, but I’ve really become a bit obsessed with them.

To feed my obsession, I started dreaming up ways to make them even better… or at least more interesting. I know, I know, you can’t improve that kind of perfection, but I had to let my creative side run wild. So here is the product of some of those daydreams brought to life… my collection of tropical honey joys!

To start, let’s make the classic…

Honey Joy Ingredients Honey Joy Ingredients 2

CLASSIC HONEY JOYS 

Ingredients: 

4 cups Corn Flakes

1/3 cup Sugar

1 Tbsp Honey

4 Tbsp Butter

Process: 

Preheat your oven to 300F / 150c and line a cupcake tin with paper cups (24-36 mini or 12 large). I strongly suggest mini because they’re adorable and you can eat more of them with less guilt. It’s scientifically proven.

In a large saucepan, over medium heat, stir butter, honey and sugar until thoroughly melted and frothing. Turn off heat and mix in corn flakes, mixing thoroughly until each little flake is equally coated and equally delicious.

Spoon this heavenly mixture into your paper cups and whack into the oven for 10 minutes.

Classic Honey Joy Spooning

When finished, let cool for at least 10 minutes to allow the clusters to harden. Now eat them all.

Now we can move on to a slightly more complex cereal treat…

Toasted Coconut Honey Joys

TOASTED COCONUT HONEY JOYS 

Ingredients: 

4 cups Corn Flakes

2 cups Coconut Flakes (not toasted)

1/3 cup Sugar

1 Tbsp Honey

4 Tbsp Butter

Process: 

Preheat your oven to 300F / 150c and line a cupcake tin with paper cups (24-36 mini or 12 large). I still recommend the minis… in fact, ESPECIALLY with these.

Now, in a large saucepan, over medium heat, stir butter, honey and sugar until thoroughly melted and frothing. Turn off heat and mix in coconut flakes and corn flakes, mixing until each little flake is throughly coated and the coconut is well-dispersed. You don’t want to end up with a coconut-less honey joy in this batch. That would be unfair.

Now go ahead and spoon this heavenly mixture into your paper cups and whack into the oven for 10 minutes. When finished, let cool for at least 10 minutes to allow the clusters to harden. Dig in.

Let’s take it up one more notch and make it really interesting…

Apricot-Coconut Honey Joys 2

APRICOT-COCONUT HONEY JOYS 

Ingredients: 

4 cups Corn Flakes

1 cup Coconut Flakes (not toasted)

1 cup Diced Dried Apricot

1/3 cup Sugar

1 Tbsp Honey

4 Tbsp Butter

Process: 

Preheat your oven to 300F / 150c and line a cupcake tin with paper cups (24-36 mini or 12 large). The need for minis just keeps getting stronger and stronger with each delicious ingredient you add.

In a large saucepan, over medium heat, stir diced apricot, butter, honey and sugar until thoroughly melted and frothing. Turn off the heat and mix in coconut flakes and corn flakes, mixing and crunching until all the bits are well dispersed and well coated. Even Steven.

Spoon this tropical mixture into your paper cups and whack into the oven for 10 minutes. When finished, let cool for at least 10 minutes to allow the clusters to harden. Enjoy!

Now let’s just change the whole dang game…

Cranberry-Orange Honey Joys 3

CRANBERRY-ORANGE HONEY JOYS 

Ingredients: 

4 cups Corn Flakes

1 Tbsp Orange Zest

1 1/2 cups Dried Cranberries (loosely chopped)

1/3 cup Sugar

1 Tbsp Honey

4 Tbsp Butter

Process: 

Preheat your oven to 300F / 150c and line a cupcake tin with paper cups (24-36 mini or 12 large). MINI!!!!

In a large saucepan, over medium heat, stir orange zest, chopped dried cranberries, butter, honey and sugar until thoroughly melted and frothing. Turn off heat and mix in corn flakes, mixing and crunching until each little flake is throughly coated and the cranberries are well dispersed. Nice and tidy!
