So my mom makes the best lentil soup you will ever taste. Don’t even try me on this one. It’s the best. She’s the best. Love you, mom.

This is also my dad’s favorite soup that she makes, so in honor of his 70th birthday, I will encourage you all to eat this soup. Enjoy the soup dad. You’re also the best. Love you!

Seriously though, it’s a one-step soup that requires, like, 5 ingredients and about 10 minutes active cooking time but tastes like it took hours to brew. If ever there was an appropriate time to use this obnoxious phrase, it’s now… WINNING!

This soup is the ultimate fall and winter soup. It’s hearty, healthy, flavorful, filling, etc., etc. And delicious. Did I mention it’s the best lentil soup you will ever taste? Even my husband, a very loyal meat-and-potatoes-eater fell for this soup. I mean, he doesn’t just put up with it, he really likes it.

To start, you’ll need to build a fire and pour a glass of wine. Oh wait… that’s my dad’s role in the soup. But hey, he knows what he’s doing when it comes to winter nights. So go ahead, in whatever order you choose: build your fire, pour your wine, throw your ingredients in the pot, relax, eat, pour more wine, add more wood to the fire.

PROCESS:

Rinse the lentils.

Combine all ingredients in a large stock pot.

Bring to a boil on medium-high heat.

Reduce heat and simmer 1 -1 1/2 hours.

And the best part is, the soup gets better and even more flavorful over the next few days. So pop your leftovers in the fridge and let the magic happen.

To reheat, add 1/4 – 1/2 cup water and heat on the stove at a low setting, stirring occasionally, until heated through (10-15 minutes).

The Best Lentil Soup

INGREDIENTS

1 lb lentils (green)

1 cup olive oil 

1 cup carrots (diced)

1 cup celery (sliced)

2-3 cloves garlic (halved)

1 Tbsp tomato paste

2-3 bay leaves 

2 quarts water 

sea salt & black pepper (to taste)

PROCESS:

Rinse the lentils.
