Looking for another way to use your juicer pulp? Or just an awesome-ly delicious healthy breakfast muffin? Or something to bake your post-workout protein powder in? Look no further.

These amazing moist little muffins are packed with the “waste” from your morning juice and combined with natural and healthy ingredients to create a delicious filling treat. No sugar added! They can even be easily made gluten-free or vegan!

And seriously, healthy nonsense aside, these are delicious.

Zucchini & Carrot Pulp

Makes 8-10 large muffins or 24-36 mini muffins.

INGREDIENTS:

1 cup Juicer Pulp (from zucchini and carrot)

2 medium Bananas (ripe)

2 large Eggs

1/4 cup Coconut Oil

4 Pitted Dates 

 1/3 cup All Purpose Flour 

1/2 tsp Baking Soda (bi-carb soda)

1/2 tsp Sea Salt

2/3 cup Walnuts (chopped)

EQUIPMENT

Blender (for mixing wet ingredients)

Medium Bowl (for combining wet/dry ingredients)

Muffin Tin or Mini Muffin Tin 

PROCESS:

Whack your oven on to 350F / 180c.

Combine your pulp, banana, eggs, coconut oil and dates in your blender and blend till smooth.

{Note: If you want to make these vegan, substitute 2 Tbsp ground flaxseed mixed with 6 Tbsp water for the eggs}

Pour batter into your medium bowl and whisk in flour, baking soda and salt till thoroughly incorporated.

{Note: If you want to make these gluten-free, substitute Coconut Flour (Coconut Meal) for All Purpose Flour}

Now fold in your crushed walnuts. Feel free to toast the walnuts ahead of time (make sure they’re cool), but it’s not necessary.

Spoon your batter into greased or lined muffin tins and stick them in the oven. Bake for 30-35 minutes for large muffins and 15-20 minutes for mini muffins. Rotate if needed.

Once finished baking, let cool for at least 10 minutes, if not twice that. Patience, child.

Once cool. top with walnuts, almonds, rolled oats, cranberries, dates, carrot curls… whatever you like. They definitely need something to dress them up though, since they’re not the prettiest muffin you ever made. Delicious though, they really are delicious.

Plus if you top them with something fun you can trick people who don’t like healthy food into eating them and then laugh like a Disney villain when they find out what they’re enjoying eating so much.

I might have done just that to my husband…
